Colorful Summer Beet Salad
There are so many great beets and carrots at the local Farmers Markets right now. The flavor of this fresh produce is amazing. I find sometimes that enjoying them raw is even better than cooking them. My Colorful Summer Beet Salad is delicious and simple, and it lasts for days in the fridge! Grab some beets and carrots at the Farmers Market this weekend and enjoy this salad!

Delicious colorful Summer Beet Salad!
Ingredients
- 1 bunch golden beets, peeled
- 1 bunch multi-colored carrots, peeled
- 2 tablespoons chia seeds
- basil
Vinaigrette
- 2 tablespoons olive oil
- 2 tablespoons pistachio oil*
- 2 oranges, zest and juice
- 1 lime
- 1 tablespoon honey
- salt and pepper
Instructions
- With a box grater or shredding attachment on a food processor, grate the beets and carrots. Toss the beets and carrots in a bowl with the chia seeds and zest of the oranges.
To make the Vinaigrette
- Boil the juice from the oranges and lime until you have a quarter cup of juice. Stir in the honey and let the mixture cool. When cooled whisk in the oils. Season with salt and pepper.
To make the Salad
- Toss the beets and carrot mixture with the 1/2 the vinaigrette, add more vinaigrette as you see fit. Garnish top with fresh basil.
Notes
- *I used pistachio oil but other flavored oils would be good. Next time I plan to try walnut oil and add some toasted walnut bits!
