La Fantasia Cocktail
On one of our many trips to Napa we finally went to the “Disneyland” of wine. We had put off ever stopping in at Castello di Amorosa, because it is so touristy that we thought the wines wouldn’t be up to our standards, yes we are snobs. We were pleasantly surprised that the wines were good and the castle is something impressive.

One of our favorite Wines that they had was a very low alcohol (7%) sweet rosé, yes unlike anything we typically go for.
Tasting NotesAn Italian style soft sparkling wine which is lower in alcohol, naturally sweet and refreshing with bright aromas of wild berries, exotic flowers and orange peel. Darker in color than most rose-style wines, this is loaded with flavor and has more structure. It is absolutely packed with black raspberry, plum and strawberry flavors in the mouth and ample sweetness which leads to a creamy, round finish.-Castello di Amorosa, website
The reason I loved this wine was because I saw the possibilities of using it other ways. I knew I wanted to create a cocktail with this wine to enjoy on a summers day. Since it is so low in alcohol you can easily drink it earlier in the day and not feel guilty. Once Happy Hour comes around though you should doctor it up to give you a better buzz. With the sweetness of this wine it can hold up to the addition of plain sparkling water as well.
For my La Fantasia Cocktail I also wanted to add a bitter component to offset the sweetness. So quickly added some Campari and it was delicious. This cocktail has everything from Sweet, Bitter, Effervesce, and Alcohol.

- 1 ounce Vodka
- 1/2 ounce Campari
- 2 ounces La Fantasia
- Ice
- Sparkling Water
- Super simple, combine first 4 ingredients in a glass and stir, top off with the sparkling water. Enjoy!
