Date Stuffed Mushrooms
Talk about a Wow Factor. These mushrooms are always favorites each time I serve them. They can be served warm or at room temperature and this makes them super versatile because you can prepare them ahead. I really think these Date Stuffed Mushrooms are the perfect, quick appetizer for any dinner party. They pair perfectly with the fruit forward Due Anni red blend from Patterson Cellars.

Date Stuffed Mushrooms

Ingredients
- 1 cup panko crumbs
- ½ cup chopped prosciutto
- ½ cup Parmesan
- 1 shallot, minced
- ½ cup chopped dates
- Mayonnaise to bind
- Salt & Pepper
- 20 cremini mushrooms
- olive oil
Instructions
- Combine all ingredients except mushroom caps in a bowl and stir to combine. Spoon mixture into mushroom caps and place on a baking sheet. Drizzle with olive oil and sprinkle more Parmesan on top of each cap.
- Bake for 20 minutes at 400 degrees.
- Serve warm or at room temperature.
