Easy Five Bean Bake
What barbecue is complete without baked beans? Some baked bean recipes are definitely better than others. I understand that a lot of people like to put bacon in their baked beans, but I prefer to make mine vegetarian. If you are hosting vegetarians and meat eaters, it’s nice to make all the sides meatless so that everyone can enjoy them.
The recipe for my Five Bean Bake has tons of flavor and it’s super easy to make with ingredients found in most pantries. And bonus — they for great leftovers as well because they reheat perfectly!

Serves 12
Ingredients
- 1 tablespoon olive oil
- 1 onion, chopped
- 1 red bell pepper, chopped
- 5 sprigs fresh thyme
- 2 fresh bay leaves (or one dried)
- ½ teaspoon cayenne pepper (less or more depending on taste)
- 3 tablespoons yellow mustard
- 1 1/2 cups ketchup
- 1 cup cider vinegar
- 2/3 cup molasses
- 3/4 cup of water
- 2 14 ounce cans kidney beans
- 2 14 ounce cans black beans
- 2 14 ounce cans white beans (cannellini or even great northern)
- 1 14 ounce can garbanzo beans
- 1 14 ounce pinto beans
- Important: Make sure all beans are drained and rinsed well.
Instructions
- Preheat oven to 350 degrees.
- With kitchen string, tie together the sprigs of thyme and bay leaves. This way, you can fish them out easily at the end.
- In a large Dutch oven over medium heat, heat olive oil.
- Add onion to the olive oil and sauté till slightly translucent. Add bell pepper and cook until softened.
- Add all remaining ingredients and mix well. Season with salt and pepper.
- Cover and bake in the oven for 45 minutes to an hour. Stir every 10 minutes or so, and if mixture seems dry, add a little more water.
- Discard bay leaves and thyme.
Notes
- *This is great to make the day ahead and cool completely and refrigerate. Reheat on the stovetop and add small amounts of water if too dry.
