Garlic Spinach Tofu with Peanut Sauce
I always love to have easy and fast go to dinner recipes. My Garlic Spinach Tofu with Peanut Sauce is always my go to weeknight dinner when i’m in a rush. The nice thing is I typically have all the ingredients in the fridge. When working out the recipe recently I added asparagus to the mix since I had some, you can add more veggies too. Serve along with brown rice or rice of choice and a dollop of my delicious peanut sauce!
Use the peanut sauce as a dipping sauce for my Fresh Summer Rolls!
Garlic Spinach Tofu

Fast and easy weeknight dinner!
Ingredients
- 1 tablespoons peanut oil
- 2 garlic cloves, chopped
- 1 bag (9oz) baby spinach
- ½ bunch asparagus, cut into 2-inch pieces
- 1 block firm tofu- cut into 1-inch cubes
- large pinch red pepper flakes
- ½ lemon
- salt & pepper to taste
Instructions
- In a wok or other large pan heat oil over medium high heat. Add garlic and sauté for 1 minute, add red pepper flakes and stir.
- Add tofu and asparagus, toss with oil and garlic, sauté until heated thru five minutes. Add spinach and toss, cook until spinach is wilted. Season the dish with salt and pepper to your taste. Lastly add a squeeze of lemon to give the whole dish brightness.
Notes
- Serve with brown rice (make according to package) and peanut sauce.

Peanut Sauce

Ingredients
- 1 tablespoon peanut oil
- 1/2 a bunch of green onions (like 5 onions)
- 2 garlic cloves, chopped finely
- 1 inch or so of fresh ginger-root, peeled and finely chopped
- 1 cup of water
- 3/4 cup of peanut butter, creamy or chunky
- 1/4 cup soy sauce
- 1/4 cup white vinegar
- 3 tablespoons brown sugar
- 1/2 teaspoon red pepper flakes
Instructions
- Heat oil in a pan over medium high heat. Add next three ingredients and sauté for a minute or two until fragrant but not burnt. Add remaining ingredients, stir to smooth and bring mixture to a simmer.
- Remove from heat and cool, place in fridge, when ready to use if it's thick add a bit of warm water, to thin it out, whisk till you have desired consistency.
Notes
- Great as a sauce for Garlic Spinach Tofu or a dipping sauce for Fresh Summer Rolls.
