Memorial Day Rhubarb Margarita
As we celebrate Memorial Day, we say good bye to spring and hello to summer. Exiting spring means rhubarb season is ending, so I thought, why not give rhubarb one last hurrah? A few weeks ago, I shared a recipe for my Rhubarb Tonic — the rhubarb syrup I make for that cocktail is so flavorful. One day while I was running, I came up with the idea for a rhubarb margarita. I really love making syrups that can be used in a variety of ways, including in many cocktails. Try making a batch of rhubarb syrup and then you can offer Rhubarb Tonics as well as this delicious Rhubarb Margarita.
Memorial Day Rhubarb Margarita

Rhubarb Syrup
- 4 stalks rhubarb, diced
- 1 cup sugar
- 1 cup water
- 2 lemons juiced
- ½ teaspoon vanilla extract
Cocktail
- Wedges of lemon
- salt
- 2 ounces silver tequila
- ½ ounce lemon juice
- 1-2 ounces rhubarb syrup
- ice
- shaker
To Make Rhubarb Syrup
- In a saucepan, combine all ingredients. Bring to a boil and then lower heat to medium and cook for 10 minutes, stirring occasionally. Strain mixture and press through a sieve. Discard solids. Syrup can now be placed into a pitcher for easy pouring. This makes a good amount of syrup; use it for Rhubarb Tonics too!
To Make Rhubarb Margarita
- Fill a martini shaker with enough ice to fill an old fashion glass. Pour in tequila, lemon juice, rhubarb syrup and shake.
- Rim the glass with the lemon and then dip into the salt to make a salted rim. Pour shaken margarita with ice into glass, fill with more ice and garnish with lemon wedge.
