My Favorite Summer Harvest Breakfast — Tomato Toast
So many times my favorite meals don’t really have recipes and what makes them so good is that they just have the most flavorful fresh ingredients. As you know, I have 18 tomato plants this year and I’m harvesting about 20 pounds every few days. So in other words, I have tomatoes coming out my ears.
Kevin and I have been enjoying fresh tomatoes at every meal lately. Lunch can be a great BLT or my Crabmelt BLT (recipe coming next week). Dinner has been comprised of Caprese Salad, Roasted Tomato Soup or a simple roasted tomato sauce for pasta (Quick Easy Roasted Tomato Sauce, also coming soon).
My favorite tomato dish is what I have for breakfast — my Tomato Toast. I started enjoying this years ago and I honestly don’t remember when, but every year as the first tomato ripens, I look forward to my breakfast of Tomato Toast.
Tomorrow, you should try this dish for your own breakfast or even lunch. But take note, you must use fresh grown local tomatoes because store bought tomatoes just don’t have the flavor.
- 2 slices of good, local artisanal bread
- Mayonnaise
- 1 large heirloom tomato
- Johnny’s Seasoning Salt
- Toast the slices of bread to golden. I like that the bread is golden and crispy but still soft for this dish.
- Spread each slice with a good amount of mayonnaise and then layer on slices of the tomato. Sprinkle each with the seasoning salt and enjoy. Simple and Delicious!
