White Chocolate Cranberry Delights
I love the Cranberry Bliss bars at Starbucks during the holiday season. The flavor just screams “Holidays” when you take that first bite. So just the other day, I set out to take those flavors and come up with a new cookie. I really love what I came up with and judging form our Holiday Open House at my studio this past weekend, everyone else loves them too.
White Chocolate Cranberry Delights

Ingredients
- 2 sticks unsalted butter at room temperature
- 1 cup sugar
- ½ cup dark brown sugar
- 2 eggs
- 1 tsp vanilla
- ¼ cup Amaretto
- 2 cups flour
- 1 tsp baking powder
- 1 tsp baking soda
- ½ tablespoon cornstarch
- 1 tsp salt
- 2 cups oats
- 1 ½ cups white chocolate chips
- 1 cup dried cranberries
- 1 cup sweetened coconut
Instructions
- Preheat oven to 350°
- Sift together the flour, baking powder, baking soda, salt and cornstarch. Set aside.
- In the bowl of your mixer, cream together the butter and the sugars with the paddle attachment. Cream the mixture until everything is well incorporated and the mixture has become light and fluffy.
- Add the eggs on low speed, one at a time. Mix until incorporated.
- Mix in the Amaretto and vanilla. The mixture might appear to be curdled — don’t worry, it will come back together.
- On low, slowly add in the dry ingredients and mix until incorporated.
- Next, add in the oats, white chocolate chips, dried cranberries and coconut, one ingredient at a time. Mix after each addition until incorporated.
- On two baking sheets lined with parchment paper using a small cookie scoop, make balls of dough. Place 12 cookie scoops per sheet.
- Bake in the oven for 7 minutes, then rotate pans and bake another 7 minutes.
- Let cool slightly on pan and then transfer and cool on a cooling rack. Continue with remaining dough.
